Chicken and Tater Tot Casserole

I have always loved the classic tater tot casserole, but when cooking for my family, every meal has to include a protein.  I added chicken and bacon to the classic recipe to make this a pleaser for everyone.

  • 32 ounce bag of frozen tater tots
  • 1 pound bacon, cooked and sliced small
  • 2 chicken breasts, diced
  • 1-1/2 cups shredded cheddar cheese
  • 1-1/2 cups shredded mozzarella
  • 3/4 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Spray the slow cooker with cooking spray.  Place 1/2 the tater tots in the slow cooker.  Top with half the bacon, half the chicken and half the cheddar cheese.  Repeat these layers.  Mix milk, salt and pepper and pour over the ingredients in the crockpot. 

Cover and cook for 4 to 6 hours.  It's important not to overcook or recipe will become mushy.
