Chicken Taco Supreme Chili

We love chili any time of the year, but especially in the fall and the winter.  This is a good change from the classic chili and so full of flavor.  My husband would appreciate a crock of this in the refrigerator any time!

  • 3 large, boneless chicken breasts
  • 2 cups frozen whole kernel corn
  • 1 15 oz can of black beans, rinsed and drained
  • 1 15 oz can of light red kidney beans, undrained
  • 1 15 oz can tomato sauce
  • 1 cup thick and chunky style salsa
  • 3 teaspoons chili powder
  • 2 teaspoons paprika
  • 1-1/2 teaspoons onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Place the chicken breasts on the bottom of the crockpot. 

In a large bowl, mix the corn, black beans, kidney beans, tomato sauce, salsa and all the seasonings.  Pour over the chicken.   Cook on the low setting for 7 - 8 hours.

Garnish chili with cheddar cheese, sour cream or any other favorite taco topping.
