  • 3 pounds red potatoes, halved or quartered, peeled or unpeeled
  • ½ cup chicken broth
  • ½ cup whole milk
  • 4 cloves minced garlic, preferably fresh
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 tablespoons butter
  • 2 tablespoons sour cream

Spray the crockpot with cooking spray or butter.

The potatoes don't have to be peeled, but if you'd prefer them that way the recipe can work either way.  Cut the potatoes into chunks and place in the crock pot.  Add the chicken broth, milk, garlic, salt and pepper.  Cook on low for 3 - 4 hours.

When potatoes are fork-tender, add the sour cream and putter.  Mash the potatoes to your desired consistency.  Add more milk if needed.

Top the potatoes with fresh parsley, chives or dill to add color to your plate!
