Healthy Vegetable Soup

A very hearty vegetable soup!

I don't normally like vegetable soup, but my husband does so I was giving it a try.  After 4 hours in the crock pot, I had him try my recipe and his comment was, "It tastes like the ingredients you put in."  No kidding?  But he suggested adding some spices and beef broth and it turned the recipe into a delicious soup.  Even I, who doesn't normally like vegetable soup, liked it!

Ingredients:

  • 1-1/2 pounds ground beef
  • 1 medium onion
  • 1 12-ounce bag of mixed vegetables
  • 1 15-ounce can of pinto beans
  • 1 cup frozen corn
  • 1 cup frozen carrots
  • 2 15-ounce cans of diced tomatoes
  • 1 cup water
  • 3 cups beef broth
  • 1 teaspoon kosher salt
  • 1-1/2 teaspoons garlic powder
  • 1-1/2 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon pepper

Directions:

Cook the ground beef and onions until no pink is present.  Put this and all the additional ingredients in the slow cooker.  Cook on low for 6-7 hours.

** Cook's Note:  This is a great dish for diets that are gluten free or dairy free. 

There are a lot of variations that can be made with this recipe.  Instead of using ground beef as listed above, you could try Italian sausage or shredded chicken.  If you change the protein you use in the recipe, you may have to adjust or change the spices you use.  It's a very forgiving recipe. 

This recipe is also very kid friendly.  I know it has a lot of vegetables, but the colorful ingredients attract their attention.  Once they try it, they're hooked.
