If you've never made dessert in a crockpot before, this is a great recipe to start with. The inside is moist and spongey and the outside is chewy and flavorful. While this would definitely go over great with any group, it also holds up well for a few days if you're only serving a few people at a time.
In a large bowl, combine all the ingredients except the caramel topping. Mix well. Spray the crock pot with cooking spray. Pour the batter in an even layer into the crock.
Place 6-8 paper towels on top of the crock and cover. Cook on high for 2-4 hours. Cooking times can vary, be sure to monitor your crock pot closely.
Cake is best served warm. Top with caramel drizzle.
